Preheat oven to 350℉. Grease a loaf pan with Coconut Oil or Butter and Set aside
In a large mixing bowl, combine dry Ingredients - Flour, Sweetener, Baking Powder, Baking Soda, Salt, Cinnamon, Nutmeg and mix well.
In a separate bowl, combine wet ingredients - banana, eggs, coconut oil, vanilla extract and mix well.
Combine wet and dry ingredients and mix until combined. If using, fold in chocolate chips, walnuts and coconut flake. I saved half a banana and a few chocolate chips to decorate the top.
Transfer batter into the greased loaf pan and bake for 45-50 minutes or until tooth pick comes out mostly clean. Let cool completely before slicing.
Notes
Note: If you choose to decorate as per the photos using half a banana on top, please note it may affect the cooking time. Although it yields a beautiful looking result, the loaf may not cook as evenly and also require more time in the oven. If you prefer a dry or "cake like" consistency then omit the banana on top. The standard version of the recipe calls for chocolate chips only. Walnut and coconut flakes and a great addition if you want to add a little more flavour and crunch.
